NZ 590143 Disclosed is an isolated apalbumin protein, or a functional fragment thereof, which has been methylglyoxal (MGO)-modified on at least one amino acid residue of said protein or functional fragment. Also disclosed is a method for producing an anti-inflammatory molecule by modifying royal jelly, the method including the step of reacting royal jelly with at least 0.1% MGO, thereby producing an MGO-modified molecule that has anti-inflammatory capacity. Further disclosed is the use of said isolated apalbumin protein in the treatment of inflammation.
