The present invention relates to a method of continuously extracting water-soluble and fat-soluble components from red ginseng. The method comprises: a mixing step of making a mixture solution by adding dried and ground red ginseng powder and enzymes of a solidified or liquefied water-soluble component to distilled water of which acidity is regulated at a weight ratio of 1:0.01-0.03; an enzyme reaction step of making a reaction solution by making the mixture react at 45-60°C for 1-3 hours; a water-soluble component collecting step of inactivating the enzymes by heating the reaction solution at 100°C for five minutes, and then, filtering the solution to remove residues while collecting water-soluble effective components; and a fat-soluble component extracting step of collecting fat-soluble effective components remaining in the residues of the red ginseng by extracting and vacuum-concentrating the residues of the red ginseng through an organic solvent. According to the present invention, when effective components of red ginseng are extracted, water-soluble effective components are collected through an enzyme reaction, and then immediately fat-soluble effective components are sequentially extracted through an organic solvent, and thus, the present invention is capable of extracting the water-soluble and fat-soluble effective components of the red ginseng while maximizing the components, thereby improving the efficiency of red ginseng extraction and making a beneficial effect on the health of users.본 발명은 홍삼의 수용성과 지용성 성분의 연속추출방법에 관한 것으로, 건조시키고 분쇄한 분말형태의 홍삼과 고체 또는 액체 형태로 이루어진 수용성 성분의 효소를 1:0.01~0.03의 중량대비로 산도가 조정된 증류수에 첨가하여 혼합액을 제조하는 혼합단계와, 상기 혼합액을 45 ~ 60℃의 온도에서 1 ~ 3시간 반응시켜 반응액을 제조하는 효소반응단계와, 상기 반응액을 100℃에서 5분간 가열하여 효소를 실활시킨 후, 여과하여 홍삼의 잔여물을 제거하면서 홍삼의 수용성 유용성분을 회수하는 수용성 성분회수단계와, 상기 수용성 성분회수단계에서 추출되고 남은 홍삼의 잔여물을 유기 용매로 추출, 진공농축하여, 상기 홍삼의 잔여물에 잔존하는 지용성 유용성분을 회수하는 지용성 성분추출단계로 이루어진다.본 발명은 홍삼의 유용성분 추출 시 효소반응을 이용하여 수용성 유용성분을 회수하면서 바로 유기 용매를 이용하여 지용성 유용성분을 순차적으로 추출하여, 홍삼에 함유
