PROBLEM TO BE SOLVED: To provide: an effervescent beverage in which the foam characteristics are effectively improved； a raw-material liquid； and a method associated therewith.SOLUTION: The method for producing effervescent beverage comprises: preparing a first raw-material liquid by using a plant raw-material； preparing a second raw-material liquid by boiling the first raw-material liquid； and carrying out a pH decrease treatment to decrease pH of the second raw-material liquid, and by using the second raw-material liquid finished with the pH decrease treatment, an effervescent beverage having a NIBEM value higher than a NIBEM value of the effervescent beverage produced by using the second raw-material liquid without carrying out the pH decrease treatment, is produced.【課題】泡特性が効果的に向上した発泡性飲料、原料液及びこれらに関する方法を提供する。【解決手段】本発明に係る発泡性飲料の製造方法は、植物原料を使用して第一の原料液を調製すること、前記第一の原料液を煮沸して第二の原料液を調製すること、及び前記第二の原料液のｐＨを低下させるｐＨ低下処理を行うことを含み、前記ｐＨ低下処理後の前記第二の原料液を使用して、前記ｐＨ低下処理を行うことなく前記第二の原料液を使用して製造される発泡性飲料のＮＩＢＥＭ値より大きなＮＩＢＥＭ値を有する発泡性飲料を製造する。【選択図】図６
