Disclosed is an easy and less expensive method for reducing an unpleasant taste of a material, which has a characteristic unpleasant taste and is useful for the human body, such as a functional component. A material having an unpleasant taste is mixed with a liquid dispersion of a gluten material having been dispersed using a water-soluble polysaccharide containing galacturonic acid, or a liquid dispersion of a gluten material having been dispersed using an aqueous alcohol or an aqueous saccharide solution, to form a complex of the gluten material. Thus, the unpleasant taste can be reduced.
