PROBLEM TO BE SOLVED: To provide a novel alkyl-modified polysaccharide that exhibits sufficient emulsifying power and enhancing effects of foam qualities even when used solely.SOLUTION: The alkyl-modified polysaccharide comprises a polysaccharide or a derivative thereof, a part of which is alkyl-modified with a short-chain alkyl glycidyl ether. An oil-in-water type emulsion obtained by using an oil-in-water type emulsifier containing one or two or more alkyl-modified polysaccharides is provided.
