PROBLEM TO BE SOLVED: To provide a method for improving aroma of cocoa powder which enables production of cacao mass and cocoa powder each reinforced in aroma: and to provide food and drink containing the cacao mass or the cocoa powder.

SOLUTION: The method for improving aroma of cocoa powder includes conducting a step of roasting cacao beans or its processed product at least twice in a cacao mass production method having a step of pulverizing cacao beans or its processed product and the step of roasting cacao beans or its processed product. The cacao mass and the cocoa powder are each produced by the method. The food and drink contain the cacao mass or the cocoa powder. In the method, an alkali treatment is preferably performed in a cacao mass condition, and the heating temperature after addition of an alkali agent preferably reaches 100°C or more under normal pressure.
