PROBLEM TO BE SOLVED: To provide a production method of molding baked confectionery in which favorable molding property and strength can be obtained by short time even in a raw material not including an expansion agent.SOLUTION: A production method of molding baked confectionery includes a molding process in which a mold for foam formation molding in which a heater is build in and that comprises a pair of male mold and female die in which fit can be performed is used, a raw material that does not include sodium bicarbonate as a swollen agent is included between the male mold and the female die that are pre-heated to prescribed temperature by the heater beforehand, the male mold and the female die are fitted, the raw material in the mold is heated to perform foam formation and burning, and thereby baked confectionery is molded, wherein the molding process includes a process in which the raw material as a burden is applied with high frequency wave through the male mold and the female die, and dielectric heating is performed.COPYRIGHT: (C)2014,JPO&INPIT【課題】膨張剤を含まない原料でも短時間で良好な成形性および強度が得られる成形焼き菓子の製造方法を提供すること。【解決手段】ヒータを内蔵した嵌合可能な一対の雄型と雌型からなる発泡成形用の金型を用い、前記ヒータにより予め所定温度に予熱した雄型と雌型の間に膨化剤としての重曹を含まない原料を介在させて雄型と雌型を嵌合させ、金型内で原料を加熱して発泡・焼成することにより焼き菓子を成形する成形工程を備え、前記成形工程は、雄型と雌型を介して負荷としての原料に高周波を印加して誘電加熱する工程を含むことを特徴とする成形焼き菓子の製造方法。【選択図】図6
