The present invention relates to a natural soap producing method using coffee vinegar and onion vinegar, which is able to increase moisturizing effects by smoothly mixing oil contained in soap with a cream production method used in cosmetics, and improve skin texture by increasing deep cleansing effects for preventing dermatitis and enabling clean face washing through the antimicrobial and sterilizing efficacy of functional fermented vinegar. The functional natural soap producing method using coffee vinegar and onion vinegar comprises the following steps of: (a) mixing yeast liquid and sugar in extracted coffee and then, producing coffee liquor by alcoholic fermentation； (b) inoculating acetic acid bacteria or natto bacteria in the first fermented coffee and then, producing coffee vinegar by fermentation； (c) steaming unpeeled onion and then, producing onion juice by compression； (d) mixing the yeast liquid and the sugar in the onion juice and then, producing onion liquor by alcohol fermentation； (e) inoculating acetic acid bacteria or natto bacteria in the onion liquor and then, producing onion vinegar by fermentation； (f) mixing the coffee vinegar, onion vinegar, fish vinegar extract, cotyledon extract, and green tea extract, and adding and mixing emulsion wax, beeswax, and alcohol to produce cream； and (g) mixing the cream with a dissolved soap base and then, producing soap by cooling.본 발명은 화장품에 이용되는 크림제조 공법을 이용해서 비누에 소지되는 오일의 혼합을 원활하게 하여 보습의 효과를 높이고, 기능성 발효식초의 효능에 의하여 항균 및 살균효과에 의하여 피부염을 방지하는 딥클린징 효과를 높이고 깨끗한 세안으로 피부결 개선에 도움을 줄 수 있는 커피식초 및 양파식초를 이용한 천연비누의 제조방법에 관한 것이다. 본 발명은 (a) 추출한 커피에 효모액과 설탕을 혼합한 다음, 알코올 발효하여 커피주를 제조하는 단계； (b) 상기 1차 발효된 커피에 초산균 또는 낫토균을 접종한 다음, 발효하여 커피식초를 제조하는 단계； (c) 껍질채 양파를 증숙한 다음, 압착하여 양파즙을 제조하는 단계； (d) 상기 양파즙에 효모액과 설탕을 혼합한 다음, 알코올 발효하여 양파주를 제조하는 단계； (e) 상기 양파주에 초산균 또는 낫토균을 접종한 다음, 발효하여 양파식초를 제조하는 단계； (f) 상기 커피식초, 양파식초, 어성초 추출물, 자소엽 추출물 및 녹차 추출물을 혼합한 다음, 유화왁스, 밀랍 및 알코올을 첨가한 다음 혼합하여 크림을 제조하는 단계； 및 (g) 녹인 비누베이스에 상기 크림을 혼합한 다음, 냉각하여 비누를 제조하는
