PROBLEM TO BE SOLVED: To provide a molecule mixture in which polyphenol is stabilized and which is protected from oxidation processes.SOLUTION: There is provided a molecule mixture comprising amphipathic molecule type A which has a positive total charge in a hydrophilic range, and an amphipathic molecule type B, and a polyphenol C. The molecule types A and B and the polyphenol C are present in the molecular ratio A:B:C of 1(±0.2):1(±0.2):0.5-5 mol/mol. The molecule type A is a quaternary ammonium salt, such as 1,2-dioleoyl-3-trimethylammonium-propane. The molecule type B is phospholipid, such as 1,2-dioleoyl-sn-glycero-3-phosphoethanolamine.
