PROBLEM TO BE SOLVED: To provide a method for producing chocolate pudding excellent in bacterial preservability, and to provide pudding produced by the method.

SOLUTION: The method for producing chocolate pudding includes: a chocolate liquid-preparing process for preparing chocolate liquid by admixing liquid containing a primary emulsifier having a HLB of 9-16 and chocolate a chocolate emulsified liquid-preparing process for preparing chocolate emulsified liquid by admixing the chocolate liquid and a secondary emulsifier having a HLB of 4-7 a raw material liquid-preparing process for preparing raw liquid by admixing the chocolate emulsified liquid and a gelling agent-containing component and a sterilization process for sterilizing the raw material liquid.
