Disclosed is a process (and a product obtained therefrom) for producing a lipid enriched fraction and a lipid depleted fraction from a neutral lipid-depleted dairy product comprising the following steps: (1) providing a dried high-fat low-lactose dairy starting material (2) subjecting the starting material to a near critical carbon dioxide extraction process to produce a neutral lipid-depleted dairy product (wherein the near critical carbon dioxide pressure is at least 73.2 bar and the temperature is in the range 304.2 to 373K) and (3) subjecting the lipid-depleted dairy product to a liquid dimethyl ether extraction process to produce a lipid enriched fraction and a lipid depleted fraction. Further disclosed is a lipid depleted dairy product extracted from a dried high-fat low-lactose dairy starting material, obtainable by a process as defined above, enriched in milk fat globule membrane proteins and comprising (a) 60-80% w/w protein (TN x 6.38), (b) 6-12% w/w lactose, and (c) 5-11% w/w fat, including phospholipids. Also disclosed is an infant formula which comprises: (a) 30 - 60 % w/w lactose (b) 15 - 35% w/w vegetable oils (c) 0 - 40% w/w skim milk powder (d) 0 - 40% w/w whey protein concentrate and (e) 1 - 50% w/w of a product as defined above.
