The present disclosure is related to low cholesterol shrimp, additionally enriched with unsaturated fat acids (HUFA), present in the lipids found in muscles. Likewise, the present invention describes a method of obtaining said shrimp, including the use of a biologically acceptable amount of a bivalve concentrate administered through a novel food for crustaceans. The obtained shrimps by the described process, are additionally enriched with highly unsaturated fatty acids (HUFAs) such as EPA and DHA, that are present in the muscles presenting higher tolerance to stress, growing rapidly during production in culture and having no differences in color, smell, taste, texture and other sensory characteristics in relation to shrimp which are fed with commercial foods made from fishmeal or fish oils. The crustaceans of the present invention are suitable for human and other animal consumption.La presente invenci?n se refiere a camarones con bajo contenido de colesterol, enriquecidos adicionalmente con ?cidos grasos insaturados (HUFA) presentes en los l?pidos encontrados en el m?sculo. As? mismo, la presente invenci?n describe un m?todo de obtenci?n de dichos camarones, que incluye el uso de una cantidad bil?gicamente aceptable de un concentrado de bivalvos administrado a tev?s de un alimento novedosos para crust?ceos. Los camarones obtenidos por el proceso descrito se encuentran adicionalmente enriquecidos con ?cidos grasos altamente insaturados (HUFAs) como EPA y DHA, presentes en el musculo presentan adem?s mayor tolerancia al estr?s, crecen de forma acelerada durante su producci?n en cultivo y no presentan diferencias de color, olor, sabor, textura y otras caracter?sticas sensoriales en relaci?n a camarones que son alimentados con alimentos comerciales a base de harinas o aceites de pescado. Los crust?ceos de la presente invenci?n son adecuados para consumo humano y de otros animales.
