PROBLEM TO BE SOLVED: To provide a method for producing packaged vegetables, capable of preventing discoloration of vegetables, and keeping the appearance excellent during long period preservation, and to provide a discoloration preventing material.
SOLUTION: This method for producing the packaged vegetables includes a process of bringing a solution which contains at least either chlorite or hypochlorite into contact with vegetables, a process of bringing a dispersion liquid which contains pulverized egg shell of an average particle diameter of 1 &mum or below into contact with the vegetables, and a process of packaging the vegetables.
