In a method for processing fish, poultry, or other meat products transported in multitude along a processing line (10), components to be excluded from consumption are separated, and the food products (7) thus obtained for consumption are checked for remaining residue by means of an automatic inspection device (3). Separation is carried out such that in a number of food products (7) minimized residue of at least one type is selectively permitted and brought in for further processing, particularly for optimizing food product yield. The automatic inspection device (3) is adjusted to detect the minimized tolerated residue, and inspected food products (71, 72) free of residue and comprising the tolerated residue are separated from each other. In a device (1) for carrying out the method, a separating device (2) is equipped with at least one separating tool such that in a number of food products (7) minimized tolerated residue of at least one type remains for further processing of the food products (7), and the inspection device (3) is connected to a separating device (41), which distinguishes residue-free and residue-containing food products (71, 72) according to the inspection results and delivers the same separately.
