A wasabi preservation method comprises: taking tubers of wasabi as a food material, removing leaves and roots of the harvested wasabi, cleaning surfaces, sterilizing for multiple times, drying in shade, then slicing and smashing into thin blocks, then grinding into fine paste, filling in a glass bottle container, immediately followed by infusing nitrogen and sealing, and then placing into a freezing device for quick-freeze preservation. In this way, the original wasabi is processed into the fine paste and then placed in the glass bottle container, so that a chance of contact with outside air may be reduced in order to avoid a quality deterioration situation caused by frequent contact with the outside air and improper preservation, and thus a purpose of completely preserving inherent quality of the wasabi for a long time is achieved.一種山葵之保存方法,係取自山葵的塊莖為食材,將收成的山葵予以切除掉葉、根,經由清洗表面、多次殺菌及陰乾處理,再進行切片及打碎成細塊,之後再予研磨成細末膏狀,以為填置在玻璃瓶容器中,隨即灌注氮氣後即密封住,再送入冷凍設備中做急速冷凍收藏,如此原生的山葵藉由加工呈細末膏狀後的置於玻璃瓶容器後,便可減少與外界空氣接觸機會、以避免因不時地與外界空氣接觸及不當保存緣故而造成變質情形,俾以達到可長時期的完整地保存山葵本身品質之目的。
