The method involves placing fresh or frozen food in a water tight container, and providing container in light overpressure before beginning of cooking of food. The overpressure is arranged approximately higher than osmotic pressure of the food. An infrared source is arranged in the container for providing thermal radiation, and internal fluids in the container are maintained at moderate pressure. A depressurization unit is arranged in the container, and an evacuation unit is arranged for evacuation of cooking gases. An independent claim is also included for a container.Cette invention concerne un dispositif de cuisson des aliments frais ou surgelés mettant en œuvre un procédé caractérisé par l'établissement d'une légère surpression, sensiblement supérieure à la pression osmotique du produit à cuire, avant la mise en route du rayonnement thermique de cuisson.
