PROBLEM TO BE SOLVED: To provide a food modifier with which gluten-containing food having excellent palate feeling and anti-aging effect can be prepared in a simple production process: and to provide food containing the food modifier.SOLUTION: The food modifier comprising modified gluten powder is obtained by kneading fresh gluten and reducing sugar and drying and pulverizing the mixture. The food containing the modified gluten powder is produced.
