PROBLEM TO BE SOLVED: To provide a bakery product which is not sticky, has a juicy feel and undergoes less daily variation of food texture, especially a laminar bakery product.SOLUTION: A plastic oil-and-fat composition has a triglyceride composition in the whole oil and fat meeting conditions 1) to 4) and contains starch of an amylose content of 30 mass% or higher. Conditions 1) the content of S3 is 0.1-8 mass% 2) the content of s2U is 28 mass% or higher 3) the P/St, or the mass ratio of P to St with P and St forming s2U, is higher than 2 and 4) the combined content of the content of sD2 and the content of U3 is 20-40 mass%, where S3, s2U, P, St, sD2 and U3 are defined in the specification.
