PROBLEM TO BE SOLVED: To provide a water-soluble composition containing gingerol known as an active component of ginger and having heat-resistance and acid resistance as an additive for foods, drinks, cosmetics or medicines, provide foods, drinks, cosmetics or medicines containing the composition and provide a method for producing a water-soluble composition containing gingerol.

SOLUTION: A water-soluble composition containing gingerol and having heat stability and stability in acidic region in the case of adding to foods, drinks, cosmetics or medicines is easily produced in high efficiency in a short time by combining gingerol or a gingerol-containing material dissolved in hydrated ethanol with a heat-treated product of a sugar.
