Described herein is a method for enhancing the production of phenolic compounds from cocoa (Theobroma cacao). For example, the devices and methods described herein increase the production of phenolic compounds from cocoa plants that have industrial and economic value. The phenolic compounds produced by the apparatus and method do not require ultra high purity purification, which is common in conventional or commercial methods.
