PROBLEM TO BE SOLVED: To provide an emulsified substance containing astaxanthin that is superior in heat resistance, acid resistance, salt resistance and the like, and to provide a method for producing the substance.SOLUTION: The emulsified substance containing astaxanthin, the astaxanthin content of which corresponds to 0.5-20 mass%, is obtained by emulsifying ingredients (A), (B), (C) and (D) into water, where (A) is 100 pts.mass of astaxanthin-containing oil (B) is 5-50 pts.mass of a polyglycerol monofatty acid ester composed of polyglycerol at an average polymerization degree of 5-10 and lauric acid (C) is 5-200 pts.mass of a polyglycerol monofatty acid ester composed of polyglycerol at an average polymerization degree of 5-10 and oleic acid (D) is 0.1-30 pts.mass of a sucrose fatty acid ester composed of sucrose and 12-18C fatty acid.
