The present invention relates to a method for providing an alpha-lactalbumin fraction and a beta-lactoglobulin fraction from a whey material obtained from milk, the method comprising the steps of: (i) providing the whey material (ii) contacting the whey material with a chromatographic support allowing beta-lactoglobulin to be retained by the chromatographic support (iii) obtaining a permeate fraction from the chromatographic support comprising the alpha-lactalbumin fraction (iv) optionally washing the chromatographic support and (v) obtaining a retentate fraction from the chromatographic support comprising the beta-lactoglobulin fraction wherein the whey material provided in step (i) has been depleted, or substantially depleted from at least one whey protein, such as at least 2 whey proteins, e.g. at least 3 whey proteins.La présente invention concerne un procédé pour la fourniture dune fraction alpha-lactalbumine et dune fraction bêta-lactoglobuline à partir dun produit à base de lactosérum obtenu à partir de lait, le procédé comprenant les étapes consistant à : (i) fournir le produit à base de lactosérum (ii) mettre en contact le produit à base de lactosérum avec un support chromatographique permettant à la bêta-lactoglobuline dêtre retenue par le support chromatographique (iii) obtenir une fraction de perméat à partir du support chromatographique comprenant la fraction alpha-lactalbumine (iv) laver éventuellement le support chromatographique et (v) obtenir une fraction de rétentat à partir du support chromatographique comprenant la fraction bêta-lactoglobuline le produit à base de lactosérum fourni dans létape (i) ayant été épuisé, ou sensiblement appauvri en au moins une protéine de lactosérum, telle quen au moins 2 protéines de lactosérum, par exemple en au moins 3 protéines de lactosérum.
