<;P>;PROBLEM TO BE SOLVED: To provide a method for producing fermented honey having a high honey content and good fragrance, fermented honey, fermented honey vinegar, dried honey, fermented honey-containing material and yeast exhibiting honey fermentation action. <;P>;SOLUTION: Sterilized hydrated honey is fermented with yeast Zygosaccharomyces mellis KYU 0402 strain (FERM P-21803).
