To provide a method for coloring pickled plum in unconventional vivid yellow through an easy production process, and to provide consequently the pickled plum improved in color tone difference caused by original individual difference of pickled plum and colored in constant yellow and further having a functionality such as liver function enhancing effect.

SOLUTION: A method for producing the pickled plum includes adding salted plum to turmeric pigment dispersing seasoning liquid adjusted to pH 2.0-3.8, and soaking the product for &ge 24 h.
