PROBLEM TO BE SOLVED: To provide a method for producing separation-type liquid seasoning in which an oil phase part and aqueous seasoning are separated from each other and which sufficiently has refreshing flavor of citrus while containing only citrus raw material.SOLUTION: The method for producing separation-type seasoning includes: soaking dried citrus peel in edible oil and fat to extract citrus flavor into the edible oil and fat adding citrus flavor oil to the aqueous seasoning while containing the citrus peel, or separating the citrus peel from the citrus flavor oil and adding the extracted citrus peel obtained after separation to the aqueous seasoning together with the citrus flavor oil from which the citrus peel is separated and removed.COPYRIGHT: (C)2013,JPO&INPIT【課題】油相部と水性調味料が分離しているタイプの分離型液体調味料において、柑橘原料だけで柑橘のさっぱりとした香味が充分に感じられる分離型液体調味料を得る。【解決手段】乾燥柑橘果皮を食用油脂に浸漬し柑橘の香味を食用油脂中に抽出し、柑橘果皮を分離除去することなく、柑橘果皮を含んだまま柑橘香味油を水性調味料に添加するか、柑橘果皮を柑橘香味油から分離し、分離して得られた抽出後の柑橘果皮を、柑橘果皮を分離除去した柑橘香味油とともに水性調味料に添加する。【選択図】 なし
