PROBLEM TO BE SOLVED: To provide a grilled chicken skin on a skewer, edible much without losing interest and to provide a healthy grilled chicken skin on a skewer, easily edible in one mouthful, and holding nutrient, while dropping oil of a chicken skin.SOLUTION: In a grilled chicken skin 1 on a skewer, chicken skin pieces 2 are folded and pierced through a skewer 3, and fried in frying oil, at an oil temperature of 150-250°C with a frying time of 60-180 seconds so as to be finished with comparatively crisp outside and comparatively soft inside, and thereafter, sauce 4 is coated thereon with a brush, and spice 5 is applied thereto.
