Food product comprising flavour encapsulates, the flavour encapsulate comprising, based on the weight of the flavour encapsulate,- from 99 to 50 wt.% of a melt-extruded core and- from 50 to 1 wt.% of a water-insoluble coating around the core,wherein the core comprises, based on the weight of the core:- from 1 wt.% to 60 wt.% of at least one flavour compound,- from 99 wt.% to 40 wt.% of a matrix material, andwherein the water content of the core is lower than 8 wt.%, based on the weight of the core, andwherein the matrix material has a glass transition temperature above 20°C, and wherein the water-insoluble coating comprises, based on the weight of the coating, less than 1 0wt.% of one of the group consisting of fat, wax, and mixtures thereof, andwherein the average particle size of the flavour encapsulate is from 200 to 5000 µm.
