PROBLEM TO BE SOLVED: To provide an apparatus and a method each for producing a processed marine product capable of preventing damage such as crack in the body of the produced processed marine product.
SOLUTION: The apparatus 10 for producing a processed marine product includes: sterilization means 12 for heat-sterilizing an object via superheated steam filled in a sterilization chamber 14a defined inside a box-like body 14 carrying means 30 carrying the object into the sterilization chamber 14a of the box-like body 14 and carrying the object out of the sterilization chamber 14a primary moisture application means 50A set up at the upstream side of a carry-in port 14b of the box-like body 14 in a carrying direction and secondary moisture application means 50B set up at the downstream side of a carry-out port 14c of the box-like body 14 in the carrying direction. In the apparatus 10, adjustment water is sprayed with the primary moisture application means 50A to make the object wet and also make moisture adjustment before heat sterilization, and adjustment water is sprayed with the secondary moisture application means to make the object wet and also make moisture adjustment before cooled.
