The present invention is directed to a processed, solid soy protein product derived from soybean meal (SBM), wherein the protein product comprises 65-75 wt% protein of the building and has a weight ratio of protein to potassium of at least about 70: Has a dry matter content of about 90%, the product is predominantly sodium free, and at least about 65% by weight of the indigestible oligosaccharide content of the SBM from which the protein product is derived is removed.
