The present invention relates to a method for manufacturing a candy containing a substitute instead of starch syrup. Natural additives to replace starch syrup according to the present invention can reduce the amount of starch syrup and sugar used while maintaining the sweetness when food is manufactured, lower the risk of side effects due to the excessive use of synthetic sweeteners, and thus are expected to be highly utilized in manufacture of confectionery including well-being foods or foods for patients with metabolic syndrome. The natural additives are prepared by mixing two or more from the group consisting of licorice, maple sap, apple, grape, peach, strawberry, banana, pear, ripe persimmon, mango, apricot, fig, citrus, and pineapple.본 발명의 물엿을 대체하는 천연 감미제는 식품 제조시 단 맛은 그대로 유지하면서 물엿과 설탕의 사용량을 줄일 수 있고, 과도한 합성 감미제 사용으로 인한 부작용의 위험을 줄일 수 있으므로, 웰빙 식품 또는 대사증후군 환자용 식품을 비롯한 당과류 제조에 큰 활용이 기대된다.
