PROBLEM TO BE SOLVED: To provide an extraction method and an extraction device which can reduce the time for extraction of effective ingredients in a cooking place.SOLUTION: An extraction device includes an electrode 2 arranged in a no-waist barrel 7, an insulation layer 3 covering the electrode, and a power source 4 applying a voltage to the electrode. The electrode is arranged in water 8 in which a food material 9 is immersed, and an effective ingredient is extracted while an AC voltage is applied to the electrode by the power source to make water in an electric-field atmosphere.
