PROBLEM TO BE SOLVED: To provide a method for inhibiting the discoloration of a catechin-incorporated fat-and-oil stemming from heating the catechin-incorporated fat-and-oil to high temperatures.SOLUTION: The method for inhibiting the discoloration of a catechin-incorporated fat-and-oil stemming from heating the catechin-incorporated fat-and-oil to high temperatures is provided, involving using a catechin-incorporated oily preparation in which the respective compounding amounts of a catechin compound, an emulsifier and water are under control within a given range.
