PROBLEM TO BE SOLVED: To provide a crushed garlic product having high capacity for scavenging active oxygen, an active oxygen scavenger using the same, and an efficient method for manufacturing a crushed garlic product having high capacity for scavenging active oxygen from raw garlic without performing the step of aging, which has been indispensable for a conventional manufacturing method of a black garlic product.SOLUTION: The manufacturing method of a crushed garlic product includes the steps of heat-treating raw garlic for manufacturing heat-treated garlic, applying pressure to the heat-treated garlic with saturated steam at a predetermined temperature for a predetermined treatment time, and steam exploding the garlic by instantaneously reducing the pressure applied to the heat-treated garlic.
