THERMO-STABLE PROBIOTIC BREAKFAST FLAKES The present invention relates to a food product for the human consumption, more specifically, it provides a processed ready-to-eat cereal flakes fortified with combination of probiotic and prebiotic, further it provides a process of incorporating combination of probiotics and prebiotics in flakes with the aim of increasing the stability and activity of probiotics in a gastro-intestinal fluid and at high temperature. The present inventio provides a gastro- intestinal and thermo-stable, ready-to-eat dry probiotic based breakfast flakes comprising a flake source coated with composition comprising of therapeutic amount of probiotic microorganism Saccharomyces cerevisiae var. boulardii and prebiotic source selected from hydrocolloid agents in a concentration between 0.1 to 20% w/w, additionally a nutraceutical agent, a thermo-protectant and an antioxidant wherein the viability of probiotic to exert therapeutic effect is retained at food serving temperature up to 80 ºC.
