This invention provides a manufacturing method of drinkable enzyme containing high-dose active yeast, which related to a manufacturing method of utilizing mixed bacteria, fermentative substrate material and fruit extracts material after fermentation and before the bacterial division reaches saturation and further occurs with hydrolysis, rapidly reducing to 5-8 DEG C to make the yeast temporarily loses high activity, so as to reduce the possibility of further hydrolysis thereby, obtaining active enzyme containing high content of active yeasts, promoting vermiculation of human intestinal tract, activating human cell motion and providing excellent drinking mouthfeel.本發明「含高劑量活性酵母菌之飲用酵素製法」,涉及一種利用混合菌體、發酵基質材料和水果萃取材料,經發酵反應後,在菌體分裂達到飽和狀態、未發生進一步水解反應前,再急速降溫至5~8℃,使酵母菌暫時失去高活性,而減緩進一步水解反應發生機會,因而達成具有高活性酵母菌含量、可促進人體腸道蠕動、活化人體細胞運動以及飲用口感極佳之活性酵素的製造方法。11‧‧‧菌體12‧‧‧發酵基質材料13‧‧‧水果萃取材料14‧‧‧高活氧純水浸泡15‧‧‧攪拌混合16‧‧‧發酵反應17‧‧‧抽氣產生低壓並高速攪拌,使殘餘酒精、CO2與O2氣體自然蒸發排除18‧‧‧過濾除渣19‧‧‧急速降溫2‧‧‧飲用酵素成品
