PROBLEM TO BE SOLVED: To provide an apparatus capable of producing a noodle string having texture closer to hand-made noodle than a noodle string produced by the conventional noodle producing apparatus.SOLUTION: A noodle producing apparatus 10 includes: a chopping board 142 disposed with the surface thereof in contact with a belt-like aggregate on a pathway where the belt-like aggregate having a plurality of noodle strings arranged like a belt moves in the longitudinal direction a blade 143 which is a thin plate-like blade for cutting the belt-like aggregate in the width direction of the belt-like aggregate and disposed with a gradient to the surface of the belt-like aggregate on the opposite side of the chopping board 142 across the belt-like aggregate and a blade moving part 144 for pressing the blade 143 to the belt-like aggregate at each designated time.
