The invention relates to a method for producing carotenoid solutions in an oil suitable for food. The invention particularly relates to a method for dissolving a carotenoid, especially astaxanthin, in an oil suitable for food by heating a suspension of the carotenoid, especially the astaxanthin, in the oil and then quenching the obtained solution. Said method comprises the following steps: i. a suspension of the carotenoid in the oil is provided； ii. a flow of the suspension is continuously heated in an oil suitable for food such that a hot carotenoid solution is obtained； and iii. the hot carotenoid solution is quenched by mixing the hot carotenoid solution with a cooler flow of an oil suitable for food in a mixing pump.
