PROBLEM TO BE SOLVED: To provide a thickening composition capable of rapidly developing viscosity through addition of a small amount of the thickening composition to a water-containing object and greatly shortening working time of consumers, through solving such problems that effective use of xanthan gum requires for completely hydrating xanthan gum at first and viscosity is not developed until xanthan gum is completely hydrated, but when a general consumer uses xanthan gum for food, only the surface of xanthan gum dissolves, the inside often remains in a powdery state, so-called an "undissolved lump state", and the undissolved lump of xanthan gum is incompletely hydrated and prevented from demonstrating the function.SOLUTION: This thickening composition contains xanthan gum whose powder surface is bonded with an enzymatically hydrolyzed guar gum.COPYRIGHT: (C)2007,JPO&INPIT【課題】 キサンタンガムを効果的に使用するためには、まず完全に水和させることが必要であり完全に水和して初めて粘度が発現する。一般消費者等がキサンタンガムを食品等に使用する際には、キサンタンガムの表面だけが溶解し、内部は粉末の状態で残る、いわゆる“ダマ”の状態になりやすく、ダマになったキサンタンガムは水和が不完全で、その機能を発揮できない状態になりやすい。本発明は、水を含む目的物に少量添加し、速やかに粘性を発現する事が可能であり、消費者の作業時間を大幅に短縮できる増粘用組成物を提供する事を目的とする。【解決手段】 キサンタンガムの粉末表面にグァーガム酵素分解物が結着したキサンタンガムを含有することにより上記課題を解決する。【選択図】 図1
