PROBLEM TO BE SOLVED: To produce good soup uniformly prepared by anyone without depending on the skill, experience and intuition of a cook and to provide a noodle dish or food served in a pot using the soup.SOLUTION: Soup is characterized in that optional one or more selected from bone materials such as scales (skin and bones) of fish, bovine bones, pig bones and chicken stock are put in water or hot water and boiled well until the color is turned into milk white in the concentrated state of gelatine and a sandy state of the bone materials can be visually observed, to turn off the flame, and strained. That is, a visually recognizable phenomenon is noticed such that the soup uniformly prepared by anyone can be provided.COPYRIGHT: (C)2014,JPO&INPIT【課題】 調理人の腕や経験やカンに頼ることなく、誰にでも一定の仕上がりとなるような上手なスープが作れ、これを用いて麺料理や鍋物料理を提供することが出来るようにすることを課題とする。【解決手段】 この発明は、魚のうろこ(皮骨)、牛骨、豚骨、鶏ガラなどの骨素材から選ばれる任意の一を、または複数を水または湯に入れ、ゼラチン質が濃縮された状態の乳白色になると共に前記骨素材が砂状になった状態が目視できる所まで煮込んで火を止め、これを濾すようにした点に特徴を有する。すなわち誰にでも一定の仕上がりのスープが提供出来るような視認可能な現象に着目したのである。【選択図】図1
