The present invention relates to sesame leaf fermentation seeds, to a sesame leaf concentrate manufactured from the same, to food and beverages such as bread, cake, and drinks including the sesame leaf concentrate, and to a manufacturing method thereof. To be more specific, the sesame leaf fermentation seeds are manufactured by adding 50 parts by weight of water or fruit juice to a mixture which is composed of 40-50 parts by weight of raisin, sesame leaf substances (40-50 parts by weight of sesame leaf juice or cut pieces of live sesame leaf, or 4-5 parts by weight of sesame leaf powder, and 35-45 parts by weight of water), 2-5 parts by weight of honey, and 2-5 parts by weight of rice powder, evenly mixing the mixture, fermenting the mixture at room temperature for 5-9 days, filtering the mixture, and then adding 5-20 wt% to the filtered solution in order to stop fermentation. Therefore, the sesame leaf fermentation seeds, the sesame leaf concentrate manufactured from the same, the food and beverages including the sesame leaf concentrate, and the manufacturing method thereof can provide sesame leaf bread or cake which contains a relatively large quantity of sesame leaves but avoids influence of the sesame leaf on the texture thereof.본 발명은 깻잎 발효씨드, 이로부터 제조되는 깻잎 발효청 및 깻잎 발효청을 함유하는 빵, 케이크, 음료 등 식음료 및 그의 제조방법에 관한 것으로, 보다 상세하게는 건포도 40~50중량부, 깻잎 성분(깻잎 착즙액 또는 생깻잎 절편 40~50중량부, 또는 깻잎분말 4~5중량부와 물 35~45중량부), 꿀 2~5중량부 및 쌀가루 2~5중량부를 포함하는 혼합물에 물 또는 과실주스 50중량부를 가하고 고르게 혼합하여 5~9일간 실온에서 발효시킨 후 여과하고, 여과액에 소금 5~20중량%를 가하여 발효를 중지시킨 깻잎 발효씨드, 이로부터 제조되는 깻잎 발효청 및 깻잎 발효청을 함유하는 빵 또는 케이크의 제조방법에 관한 것이다.
