The present invention relates to a novel method for preparing black ginseng with increased ginsenoside Rg3 content and decreased benzopyrene content, and a product thereof. The purpose of the present invention was attained by a step of modifying a general 9-times steamed and dried method to prepare black ginseng; and a step of analyzing and evaluating the contents of ginsenoside Rg3 and benzopyrene of black ginseng obtained in the above step. The present invention has an excellent effect of producing black ginseng, of which the ginsenoside Rg3 content is increased by 2 times and the benzopyrene content is significantly decreased by no more than 2 times.본 발명은 진세노사이드 Rg3 함량이 증대되고 벤조피렌이 저감된 흑삼의 신규한 제조방법 및 그 산물에 관한 것으로 본 발명의 상기 목적은 일반적인 구증구포의 방식을 변형하여 흑삼을 제조하는 단계와; 상기 단계에서 수득한 흑삼의 진세노사이드 Rg3 및 벤조피렌 함량을 분석하고 평가하는 단계를 통하여 달성하였으며 진세노사이드 Rg3 함량을 2배로 증가시키고 벤조피렌 함량이 2배 이하로 크게 감소된 흑삼을 제조할 수 있는 뛰어난 효과가 있다.
