PROBLEM TO BE SOLVED: To provide an ester-exchanged oil and fat composition having a shape retention property similar to a cured oil containing conventional trans acids even while containing substantially no trans acids, excellent in meltability in the mouth, having no change in hardness with time and effects such as having excellent stability, and capable of providing composition excellent in compatibility with other oils and fats, having no change in property with time and excellent in stability even when other oils and fats are blended.SOLUTION: A method for producing an ester-exchanged oil and fat composition subjects 10-30 wt.% of a lauric oil and fat (A) having lauric acid content in the whole constituent fatty acid of 30 wt.% or more, where the lauric oil and fat (A) is palm kernel oil or fractionation oil or cured oil of the palm kernel oil, and 70-90 wt.% of a palm-based oil and fat (B) having fatty acid content having 16 or more of carbon atoms in the whole constituent fatty acid of 35 wt.% or more, where the palm-based oil and fat (B) contains 5-45 wt.% of extremely cured oil, to transestrification, to obtain an oil and fat composition where a ratio of triglyceride having the total carbon number of 40-46 is 15-35 wt.%.SELECTED DRAWING: NoneCOPYRIGHT: (C)2018,JPO&INPIT【課題】トランス酸を実質的に含有していなくても、従来のトランス酸を含む硬化油と同等の保形性を有し、口溶けに優れ、経時的な硬さの変化がなく安定性に優れる等の効果を有し、他の油脂を配合する場合でも他の油脂との相溶性に優れ、経時的に性状の変化がなく、安定性に優れた組成物を得ることができるエステル交換油脂組成物の製造方法を提供する。【解決手段】本発明のエステル交換油脂組成物の製造方法は、全構成脂肪酸中のラウリン酸含有量が30重量%以上であるラウリン系油脂(A)10~30重量%(但し、前記ラウリン系油脂(A)がパーム核油または前記パーム核油の分別油若しくは硬化油である)と、全構成脂肪酸中の炭素数16以上の脂肪酸含有量が35重量%以上であるパーム系油脂(B)70~90重量%(但し、前記パーム系油脂(B)が、極度硬化油を5~45重量%含有する)とをエステル交換して、総炭素数40~46のトリグリセリドの割合が15~35重量%の油脂組成物を得ることを特徴とする。【選択図】なし
