PROBLEM TO BE SOLVED: To provide a transesterification oil and fat composition good in melting in mouth and capable of providing texture without slowness even when stored under a low temperature when blended with a plastic oil and fat and providing a burned article such as bread by milling the plastic oil and fat to a dough which provides texture without elasticity even when the burned article is stored under the low temperature and a plastic oil ad fat composition using the same.SOLUTION: There is provided a transesterification oil and fat composition of a lauric oil and fat and palm oil and fat, containing an extreme cured oil as the lauric oil and fat and the palm oil and fat and having total amount of the extreme cured oil of the lauric oil and fat and the extreme cured oil of the palm oil and fat of 3 to 20 mass% and lauric acid amount binding to 2-position of triglyceride of 6 to 14.5 mass%.SELECTED DRAWING: NoneCOPYRIGHT: (C)2017,JPO&INPIT【課題】可塑性油脂に配合した際に、低温下に保存しても、口溶けが良好で、もたつき感のない食感を得ることができ、可塑性油脂を生地に練り込んだパン等の焼成品は、焼成品を低温下に保存しても、ヒキのない食感を得ることができるエステル交換油脂組成物とそれを用いた可塑性油脂組成物を提供する。【解決手段】ラウリン系油脂とパーム系油脂とのエステル交換油脂組成物であって、ラウリン系油脂およびパーム系油脂として極度硬化油を含有し、ラウリン系油脂の極度硬化油とパーム系油脂の極度硬化油との合計量が3~20質量%であり、トリグリセリドの2位に結合したラウリン酸量が6~14.5質量%であることを特徴としている。【選択図】なし
