In order to provide a method for transferring and preserving aromatic substances and constituents of fresh, dried and/or processed fruits, seeds, plants and/or plant parts to an oil and thus to provide an oil which is enriched with aromatic substances and constituents and which is suitable for uses in a wide variety of sectors, it is proposed that, at least in one step in the process for producing the oil from oil-bearing fruits, seeds, plants or plant parts having a high content of antioxidants, the fruits, seeds, plants, plant parts, processed plants and/or plant parts which provide the aromatic substances and constituents are added and also processed.
