The present invention relates to a method for the production of a biopolymer, wherein the biopolymer has a defined average molecular weight, the method comprising lyophylizing a composition comprising the biopolymer with native high molecular weight, optionally purifying and/or isolating the biopolymer； wherein the temperature during the sublimation process is selected to facilitate a controlled and defined degradation of said biopolymer.La présente invention concerne un procédé de production d'un biopolymère, le biopolymère présentant une masse moléculaire moyenne définie, le procédé consistant à lyophiliser une composition comprenant le biopolymère présentant une masse moléculaire native élevée, éventuellement à purifier et/ou à isoler le biopolymère ； la température au cours du processus de sublimation étant sélectionnée de sorte à faciliter une dégradation contrôlée et définie dudit biopolymère.
