PROBLEM TO BE SOLVED: To provide a simple method for masking the unpleasant taste of saccharides, which allows saccharides (sugar/sugar alcohol) having unpleasant taste such as harsh taste, astringent taste, and tannic taste, to be used in various low-sugar or sugar-free foods and beverages developed in diet and health trends or for dental cavity protection, without the adverse effect.SOLUTION: The method masks one or a plurality of unpleasant tastes selected from the harsh taste, the tannic taste, and the astringent taste of sugar and/or sugar alcohol, by using a yeast extract.
