The present invention concerns a new a-galactosidase with transgalactosylating activity isolated from Bifidobacterium bifidum. The a-galactosidase is capable of converting mellibiose to a-galactobiose disaccharides which may be incorporated into numerous food products or animal feeds for improving gut health by promoting the growth of bifidobacteria in the gut, and repressing the growth of the pathogenic microflora.Foreliggende oppfinnelse angår en ny a-galaktosidase med transgalaktosylerende aktivitet, isolert fra Bifidobacterium bifidum. a-galaktosidasen har evne til å omdanne mellibiose til a-galaktobiosedisakkarider som kan innkorporeres i en rekke matvareprodukter eller dyrefôr for å forbedre tarmhelsen ved å fremme veksten av bifidobakterier i tarmen, og undertrykke veksten av den patogene mikrofloraen.
