PROBLEM TO BE SOLVED: To provide a dietary fiber-containing noodle that can afford physiological effects such as the inhibition of increase in blood sugar level, an intestinal function-controlling action, the improvement of lipid metabolism and the like, is delicious and is good in color/texture/flavor.SOLUTION: The dietary fiber-containing noodle contains wheat flour, indigestible dextrin as a dietary fiber and a fulvic acid mineral seasoning liquid. The indigestible dextrin is a water-soluble and low viscous dietary fiber to afford physiological effects such as the inhibition of increase in blood sugar level, an intestinal function-controlling action, and the improvement of lipid metabolism. The fulvic acid mineral seasoning liquid comprises as ingredients vinegar, a fulvic acid, calcium, a mineral salt and trehalose and the dissolution of the indigestible dextrin is inhibited by containing the fulvic acid mineral seasoning liquid without using modified starch comprising the indigestible dextrin fused with a thickening polysaccharide.
