PROBLEM TO BE SOLVED: To provide a method of producing 4-ethylphenol including a step of fermenting a tea extract with a lactic acid bacterium, and a step of treating with an enzyme which has β-glucosidase activity, a tea fermented product and a method of producing same.SOLUTION: The present inventors discovered that by including a step of fermenting a tea extract with a lactic acid bacterium, and a step of treating with an enzyme which has β-glucosidase activity, 4-ethylphenol could be produced. Furthermore, it was discovered that by combining production with lactic acid, a tea fermented product could be produced which in addition to the unique fragrance of tea, had a floral fragrance with moderate sourness and a high flavour titre, and thereby the present invention was completed.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2018,JPO&INPIT【課題】 本発明は、茶抽出物を乳酸菌で発酵させる工程及びβ-グルコシダーゼ活性を有する酵素で処理する工程を含む4-エチルフェノール生成方法、茶発酵物及びその製造方法を提供する。【解決手段】 発明者らは、茶抽出物を乳酸菌により発酵させる工程及びβ-グルコシダーゼ活性を有する酵素で処理する工程を含むことで、4-エチルフェノールが生成されることを見出し、さらに乳酸も合わせて生成されることによって、茶特有の香りに加え、フローラルな香りを有し、適度な酸味があり、風味力価の高い茶発酵物を製造できることを見出し、本発明を完成した。【選択図】図1
