PROBLEM TO BE SOLVED: To provide a proliferation method of yeast, a production method of yeast and a control method of the viable cell number of yeast which control the viable cell number of yeast by irradiation of plasma.SOLUTION: A control method of the viable cell number of yeast comprises a plasma product irradiation step of irradiating yeast with a plasma product generated from plasma which is generated in a plasma generating region by a plasma generator 100. In the plasma product irradiation step, when an amount of irradiation of the plasma product is equal to or less than a predetermined first irradiation amount, yeast is proliferated and the viable cell number of yeast is increased, and when the amount of irradiation of the plasma product is equal to or more than a predetermined second irradiation amount larger than the first irradiation amount, yeast is sterilized and the viable cell number of yeast is reduced.COPYRIGHT: (C)2015,JPO&INPIT【課題】 プラズマを照射することにより酵母の生菌数を制御する酵母の増殖方法および酵母の生産方法および酵母の生菌数の制御方法を提供することである。【解決手段】 酵母の生菌数の制御方法は、プラズマ発生装置100によりプラズマ発生領域に発生させたプラズマから発生するプラズマ生成物を酵母に照射するプラズマ生成物照射工程を有する。プラズマ生成物照射工程は、プラズマ生成物の照射量が、予め定めた第1の照射量以下である場合に、酵母を増殖させて酵母の生菌数を増加させるとともに、プラズマ生成物の照射量が、第1の照射量より大きい予め定めた第2の照射量以上である場合に、酵母を殺菌して酵母の生菌数を減少させる。【選択図】図10
